Dad’s Brussels & Bacon

Ingredients:

  • 1/2 lb brussel sprouts halved

  • 1/2 lb bacon grilled and chopped

  • 1/2 cup olive oil + 1 tbsp olive oil

  • 1 Tbsp red pepper jelly

  • 2 tsps balsamic glaze

  • 1/2 tsp sea salt

  • 1 minced garlic clove

  • 1 tbsp chopped red onion

  • 1/2 tsp garlic salt

  • 1 tsp cracked pepper

Directions:

  1. Pan sear your bacon over medium high heat in a cast iron skillet, remove and drain on paper towels.

  2. Halve brussel sprouts and begin making your sauce in a separate bowl by combining 1/2 cup olive oil, pepper jelly, balsamic glaze, sea salt, garlic, red onion and mix together thoroughly.

  3. Season Brussels with 1 tbsp olive oil, garlic salt and shake well. Add Brussels to your grill pan and cook until lightly charred, add bacon and sauce and continue to cook until slightly soft to touch and with a decent char. Serve up and enjoy!

Note: this delicious side pairs well with any protein. Lamb, chicken, beef, pork, it’s all good!
