Dad’s Chili Paste

Ingredients:

  • 3 large dried chilis ( I used 2 ancho and 1 pasilla pepper here )

  • 1 small red onion chopped

  • 2 minced garlic cloves

  • 2 tbsps tomato paste

  • 1/4 cup boiled chili water

Directions:

  1. Rinse your dried chilis and pat dry. Boil 1 quart of water or enough water to completely submerge your chilis.

  2. Place your chilis in a heat proof bowl and pour boiling water over them. Make sure they are submerged and let them sit for 10 to 15 minutes

  3. Remove from the water and pat dry. remove the stems and coarsely chop your chilis.

  4. Add all of your ingredients to your food processor or blender and process until a paste like texture is achieved. It will taste delicious!

  5. You can add this paste to tortilla soup, chili, enchiladas, tacos, meat marinades, salsa, pretty much anything to add an intense depth of flavor. Enjoy!
