Dad’s GF Banana Oat Bread

Ingredients:

  • 3 ripe bananas

  • 2 eggs

  • 50 grams ( 1/4 cup ) cashew butter

  • 25 grams ( 2 Tbsps ) coconut oil

  • 65 grams ( 1/3 cup ) brown sugar

  • 1 Tbsp vanilla extract

  • 1 tsp ground cinnamon

  • 1/4 tsp sea salt

  • 200 grams ( 2 cups ) GF oat flour

  • 50 grams ( 1/4 cup ) rolled oats

  • 2 tsps baking powder

Directions:

  1. Heat oven to 350º and grease a loaf pan with either butter or sunflower oil.

  2. Combine oat flour, rolled oats, baking powder, cinnamon. and sea salt in a medium sized mixing bowl.

  3. In a large mixing bowl mash bananas with a fork and add cashew butter, oil, eggs, brown sugar, vanilla, and stir wet ingredients together until well combined ( about 2 minutes ).

  4. Add dry ingredients to wet ingredients and mix until dry ingredients are incorporated nicely ( about 5 minutes ).

  5. Pour batter into prepared loaf pan and bake for 45 minutes or until a toothpick comes out clean after inserted in the center of your loaf.
