Dad’s Protein Bites

Ingredients:

  • 2 Tbsps ground flax seed

  • 5 Tbsps water

  • 8 oz chopped mushrooms

  • 1 fifteen oz can of chickpeas

  • salt & pepper to taste

  • 2 Tbsps tomato paste

  • 1 Tbsp soy sauce

  • 1 Tbsp olive oil

  • 1/2 cup bread crumbs

  • 2 minced garlic cloves

  • 1/2 cup chopped red onion

  • 1/2 cup chia seeds

Directions:

  1. Make your flax egg by combining your ground flax seed and water. Mix together and set aside.

  2. Add remaining ingredients to your food processor. Make your flax egg the last ingredient you add to your food processor, this will give it enough time to congeal.

  3. Process your ingredients until a smooth paste like texture is achieved. You may need to addd more olive oil if to dry, or more salt and pepper for flavor.

  4. Once you have the right consistency, cover with Saran Wrap or cling wrap and freeze for 30 minutes.

  5. Pre heat oven to 350 degrees. Place 1/2 cup of chia seeds in plate and remove protein mixture from freezer.

  6. Spoon out using a tablespoon and roll into a ball, then roll your protein ball in the chia seeds and coat evenly.

  7. Bake for 15 minutes, remove and let cool.

  8. Store in your fridge for up to a week or freeze for a couple months. Enjoy!
