Dad’s Salsa!

Ingredients:

  • 4 vine ripened or roma tomatoes

  • 1/2 yellow medium onion

  • 1 chili of your choice ( I think I used a red jalapeño here but Serranos are my favorite! )

  • As much garlic as you want!

  • 1/2 to 1 tsp of sea salt ( or just add salt to taste )

  • 1/2 tsp of ground cumin

  • 1/2 of a lime juiced

Directions:

  1. Bring a large pot with at least 2 quarts of water to a boil.

  2. Lightly carve an X in the bottom of your tomatoes using a sharp knife and carefully place your tomatoes in the boiling water for 2 minutes.

  3. Remove your tomatoes and let cool for a couple minutes. While tomatoes are cooling you can chop your remaining ingredients: garlic, onion, chili etc…

  4. I like to wear gloves for this part. Carefully remove the skin from your tomatoes ( it should just slide right off ) and then carefully remove the top core of your tomatoes.

  5. Once finished place all of your ingredients in your blender/food processor and blend until well combined. If you’re lucky the tomatoes will still be warm and the salsa will taste AMAZING!!!
